Stay Around – We’re Going to Count!

Using the Fox Park Strain sourdough starter, I’ve ‘flipped’ COUNTLESS flapjacks over the past 52 plus years. A fair number of waffles could be added to that total. 

My family has enjoyed flapjacks from the very beginning. They’re substantial, but not doughy in your belly. We enjoy plain old pancakes sometimes. They are good going down, but can lay like a brick in your belly. Then, disappear ‘way before time for the next meal. Sourdough flapjacks, using the Fox Park Strain, don’t irritate your innards.

Numbers or SIZE?

A civilized shape and size will require at least three to fill up a working man. My ‘working man’ loved to put enough batter into a cast iron skillet to create a flapjack at least 1 inch thick. Sometimes he made them thicker!  ONE would feed two guys. 

We usually had some hungry kids in the house. They kept the numbers eaten. If they missed any, there was a dog or a bunch of barn cats waiting for the leftovers. I made extras for the cats. We found that leftover flapjacks could be reheated and enjoyed for the next meal. I haven’t much experience with frozen flapjacks from my kitchen. No flapjacks were wasted in this project – Large numbers were EATEN.

The sizes between flapjacks which are ‘fried/baked’ on a griddle or hot skillet and waffles are about the same. I love a little flipper waffle maker. I use it often. As we age and our appetites dwindle, I’ve been experimenting with smaller batches which mean lower numbers.. We only have one cat and an overfed dog to take care of the scraps. 

Little Black Sambo

A big stack of flapjacks and waffles remind me of the 169 pancakes eaten by Little Black Sambo following his encounter with the tigers in the classic fairy tale.

Tasty food will still let me wander down the literature path of a cute, childhood story first published in 1923. Some protest the story now because it stars a black family. Offended by the success of this family, some people demand changes or obliteration. I didn’t care about the color of the family’s skin. I was more intrigued by the wisdom this child had when dealing with a rambunctious batch of tigers. He didn’t let their misbehavior ruin him. He was mannerly and cooperative with their outrageous threats. He simply waited around and tricked them.

I’ve never had a diner at my table eat 169 flapjacks. Not even close. We haven’t enjoyed tiger butter either. We may be the deprived owners of a tasty sourdough starter. 

Eating is only part of the story! Imagine standing over a hot griddle making that many?
